The goal of grape receiving and sorting systems

 

The goal of sorting systems is to separate all MOGs (Materials Other than Grapes) from the grapes. MOGs include all extraneous elements, such as plant residues, insects, small animals, small stones, and other inert materials, that should not continue the path in the production line. In fact, as pointed out by numerous studies, the presence of MOGs-and particularly plant parts – has a negative influence on wine quality.

In addition to these, there is the discarding of clusters that are not in the optimal condition for winemaking, due to incomplete ripening or the presence of rot.

 

If harvesting is done by hand, this sorting phase will be less substantial, since already at the time of harvesting a selection is performed and only vegetable components or unsuitable bunches and berries will remain to be separated.

Receiving tanks

Receiving tanks are an essential element in the early stages of grape receiving and processing. All our models are made of AISI 304 stainless steel, and hoppers have capacities from 3 to 30 t and can be equipped with one or two screws.

In addition to traditional tanks, there are vibrating receiving tanks, designed specifically for receiving hand-harvested grapes in crates and/or bins. These machines use vibration to distribute grapes and convey them to the next stage of the line.

 

Vibrating tables

Vibrating tables are available in three models: TVC 1500, TVC 2000 and TVL 3500 and are used in receiving lines upstream of destemmers and of sorting tables in order to distribute the product to subsequent machines and systems in the line.

The first segment of the table has a grid and allows juice and unripe or dried grapes to be separated from the grapes that are to continue in processing. The waste is collected in a tank below.

 

Sorting Belts

Designed for a minimum of six operators based on size, our NC sorting belts allow winery staff to perform continuous manual sorting to a high standard. The belts are equipped with a draining screen, drip recovery tank and washing bar.

 

Elevator belts

Available in six different versions, from 3500 – 4500 – 5500 – 6500 – 7000 – 8000, the elevator belts are intended to facilitate the loading of grapes into the presses and allow for modular sorting and grading lines, without resorting to expensive elevating structures for the different machines in the line. Adjustable in inclination, they are equipped with a drip hopper and washing bar.

 

Kappa Selection

The Kappa Selection machines were born from the idea of combining different equipment to enhance their versatility and production flexibility.  These machines are composed of a destemming system, a roller selection table, a crushing unit and a pump to evacuate the processed product. Thus, thanks to the extraction movement, the Kappa Selection allows for modular processing by combining selection, destemming and crushing at will.

 

Measuring the quality of sorting

 

The quality of sorting operations is assessed by two parameters: effectiveness and losses.

Effectiveness measures the percentage of MOGs removed in the process compared to those present at the receiving end. In fact, some research has shown that good sorting applied upstream and downstream of destemming can bring MOG to levels below 0.2 percent, with a tangible improvement in the quality of the final product.

Losses, on the other hand, measure the amount of good berries discarded in the sorting processes.
